A lot of folks around here seem to like Ernie Ball strings, and they are certainly reasonably priced. However, there's something about my body chemistry and the alloys they use in their strings where they go dead on me in just a couple of hours of playing. D'Addario's, however, tend to last a lot longer for me, so that's what most of my guitars get. If you have a Fender with a tremolo on it, I'd recommend putting Fender Super Bullets on it. They have a special shaped ball on the string that sits well in the tremolo block, and solves a lot of tuning stability issues. You need to study acoustical harmonics. That's not "Harmonica". The difference in the sound of instruments playing the same note is in the harmonics of the instrument as it is equipped and used. Once you see how that works you will better understand why and how you can discern the sounds created by different instruments even when they play exactly note.
